A Brotha in the Kitchen Presents.....Cast Iron Quinoa and Black Bean Nachos

I really wanted nachos, and I kinda, sorta remembered seeing a recipe for vegetarian nachos on Food Network or something not too long ago. So I decided to take a shot at making my own.

 

As usual, it was super easy, and the flavors were AMAZING!

 

I won’t keep you waiting any longer.

 

Let’s go!

 

Cast Iron Quinoa and Black Bean Nachos

 

Ingredients:

 

1 bag of tortilla chips of choice

1 chopped small yellow onion

2 teaspoons of cumin

2 teaspoons of paprika

1 teaspoon of garlic powder

1 teaspoon of chili powder (more to taste)

1 small can of diced chilies

1 diced red pepper

1 can of low sodium black beans (mashed)

2-3 tablespoons of garlic infused olive oil

1 tablespoon soy sauce (trust me on this)

2 cups of cooked quinoa (I found a box of boil in bag quinoa, which took about 10 minutes off my cooking time)

1 cup of Vegan Cheese

1 lime

3 tablespoons of cilantro (for garnish)

Salsa (for garnish)

 

 

 

Let's Get Cooking!

 

  • Place bag of quinoa into a pot of boiling water and let it cook for 10 minutes

  • While quinoa is cooking, heat flavored olive oil in a skillet for 3 minutes over medium-high heat and add onions and diced red pepper. Cook for 5 minutes

 

  • While the quinoa and onion & pepper mixture is cooking, preheat oven to 400 degrees and place tortilla chips into your cast iron skillet

  • Remove quinoa from water, and add it, along with cumin, paprika, garlic powder, chili powder, diced chilies (not drained) and black beans to skillet with onion & pepper

  • Mix well, remove from heat and stir in soy sauce

  • Spoon quinoa and black bean mixture (reserve ¼ cup for later) over chips and sprinkle cheese on top

 

  • Place in oven for 10 minutes

  • Remove from oven, top with remaining quinoa mixture, cilantro, and salsa then enjoy!
