This soup is really flavorful and healthy! Best of all, it's really simple to make!
Smoky Potato & Vegetable Soup
1 24oz bag of microwavable red potatoes
2 cups of shredded carrots
2 cup fresh or frozen peas, divided
1 cup canned kidney beans, rinsed
3 ears of corn, with kernels removed
4 cups of unsalted vegetable stock
1 tablespoon smoked salt
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon black pepper
1 teaspoon ground red chilli
1 minced jalapeno
2 minced garlic cloves
1/2 cup minced fresh cilantro leaves, divided
Let's get cooking!
Microwave the potatoes.
Add the potatoes, 1/2 the peas, all of the carrots, the cup of kidney beans, corn, the veggie stock and all of the spices, to your dutch oven. Place the lid on top and cook on medium high heat for 10 minutes.
Finally remove the lid, keep heat at medium high, add the chopped jalapeno, garlic, 1/2 the cilantro and stir.
Let the soup cook for 10 more minutes, add to a bowl and top with remaining cilantro and enjoy!
