A Brotha in the Kitchen presents……Maple & Curry Sweet Potato Fries!

 

As most parents know, finding healthy options for kids can be difficult to say the least. I came across a recipe for Curry Garlic Sweet Potato fries on thefirstmess.com and decided to give it a try.

 

As usual, I put my own spin on it, and they came out GREAT! So great, that Roman even wanted seconds!

 

As with most of my meals, this was really simple! It's also pretty quick, taking only 35 minutes to prepare and 25 minutes of that was spent in the oven.

Maple & Curry Sweet Potato Fries:

 

Ingredients:

 

3-4 medium sized sweet potatoes
1 1/2 tbsp chipotle Olive Oil (It wasn’t spicy, but feel free to use regular EVOO)
2 tsp yellow Jamaican curry powder

1/2 cup cooked & rinsed black beans
1-2 green onions, sliced thin

2 tbsp maple syrup

Sea salt & cracked black pepper to taste

 

Let's get cooking!

 

Preheat your oven to 425 degrees F.

 

While that is heating up start slicing your sweet potatoes into fries. Do NOT peel the potatoes…trust me on this!

 

After you peel your potatoes, toss them with your olive oil, curry powder and black pepper, and spread them out on a sheet of lightly oiled parchment paper.

 

Once they are laid out, sprinkle them with the sea salt and place into the oven for 15 minutes.

 

After 15 minutes, remove the fries, give em a good flip, and place back in the oven for 10-12 minutes.

 

While the fries are roasting, slice your green onions and rinse your black beans.

 

Finally, pull your fries out of the oven, place in a bowl, mix in the black beans, garnish with the green onions, and drizzle with the maple syrup and enjoy!
